‘Tie Guan Yin’, a Oolong green tea from Taiwan, elaborated following the rules of the ‘Yao Qing’.

This step consists in brewing the leaves in bamboo baskets in order to damage their edges and to increase their surface of oxidation.

This step is one of the utmost mastered and it explains the incomparable liqueur offered by this ‘Tie Guan Yin’.
